ricetta sardine al vapore


Healthy, low in calories and suitable with all types of fish.

Baked, poached, pan fried… there are plenty of ways to prepare fish, but if you wish to keep in sight clean, healthy eating, then this recipe is for you.

600 g sardines
100 g salt grains
100 g fine salt
10 g sugar cane
2 untreated lemons
500 g cannellini beans
1 sprig of rosemary
1 bunch of fennel
extra virgin olive oil

Mix the salt and brown sugar together. Cut the lemon into thin slices. Place in the pan with a mix of salt and sugar and leave for 24 hours. After the necessary time, rinse with hot water and dry. Cut and fillet the sardines. Marinate for 20 minutes in olive oil and fennel. In a pan, sauté a clove of garlic. Add the beans and a ladle of broth. Add the chopped rosemary and blend until creamy. Bake the sardines in steam mode at 100 degrees for 6 minutes with the candied lemons. Layer the base of the pot with cannellini beans. Place the sardines, 1 slice of lemon and rosemary sprigs to garnish.
