Nature has made them taste good and great to look at, but they are also valuable allies for our health: fruits and vegetables, with specific colors that are valuable characteristics to keep us strong and healthy. We all know how enjoyable eating fruits and vegetables can be, especially when in season, but perhaps not so well known is the fact that these foods contain colors that correspond to a pigment, a substance that is a particularly effective index of a specific set of health benefits.

RED
Beets, red peppers and chilies, watermelon, tomatoes, pink grapefruit, cherries, radishes.
They are red because they contain lycopene, one of the most powerful antioxidants found in nature. Lycopene is a carotenoid with a range of health benefits. It is active against cardiovascular disease and the aging of cells in the body. Its antiaging functions and several studies have shown its role in the prevention of cancers of the digestive tract and prostate cancer. It has been proposed that its use can decrease the incidence of arthritis and certain disorders very common today, including Parkinson's disease.

 
YELLOW AND ORANGE
Carrots, pumpkin, persimmon, melon, mango, apricots, citrus fruits.
They are yellow-orange because they contain beta-carotene. This substance, already famous for its ability to protect the skin and promote tanning, is also a potent anti-tumor agent, which strengthens the immune and reproductive systems, preventing cellular aging and protecting eyesight. Being a provitamin, which is a precursor of vitamin A,  it is activated only through metabolism, but also demonstrates other biological effects. Epidemiological studies suggest that people who live in polluted environments are more at risk of developing tumors, therefore benefit from a greater intake of beta-carotene.

 
GREEN
Broccoli, cabbage, beets, spinach, chicory, turnip greens, arugula, dandelion, nettle, salads and vegetables in general.They are green because they contain chlorophyll. Green vegetables are very comprehensive and contain  host of vitamins, trace elements and other beneficial substances such as chlorophyll that is sort of vegetable hemoglobin. Chlorophyll is anti-anemic and cleanses the blood, shapes up the heart, regulates the level of cholesterol in the blood, heals, and neutralizes toxins.

 
VIOLETT
Blueberries, eggplant, red currants, red cabbage, red grapes, plums, red onions, pomegranate, cherry, elderberry and berries in general.They are purple because they contain anthocyanins, which are antioxidants and anti-aging flavonoids. They are especially able to strengthen the capillaries and prevent atherosclerosis. Swollen legs, varicose veins or rosacea can all be treated with the color purple. In addition, it seems that blueberries are able to counteract metastasis by blocking the activity of "molecular scissors" on the cell surface, which allows cancer cells to migrate. Several studies have found a correlation between the consumption of foods rich in flavonoids and a reduction in the rate of cardiovascular disease.

 
WHITE
Garlic, cabbage, onions, turnips, radishes. They are white because they contain: sulfur. The sulfur compounds and glucosinolates (compounds containing sulfur glucoside) are the smelliest friends of our health. The smell that we notice when cooking cabbage and the pungent flavor of wasabi are due to the complex molecules, such as indoles and isotiocinati they contain that are very active against tumors. The sulfur compounds are antithrombotic, thin the blood, protect the bone tissue, reduce blood cholesterol and help fight cancer. Whatever the color of your favorite fruit or vegetable, it is certain that it will bring a positive impact to the body.
