CITRUS HONEY CAKE WITH CHESTNUTS

Perfect for breakfast and snacks and a cake for every occasion. Try it, you will not regret it.

Simple cake with lovely flavors and fragrant.

INGREDIENTS:
FOR THE SOUFFLÈ
2 egg yolks
4 egg whites
30g icing sugar
1 tablespoon of chestnut honey
15g glucose
butter for the mold
granulated sugar

PREPARATION:
Peel the oranges. Eliminate the spongy white membrane. Whip the oranges and part of the peel together. Strain the solution of any bits. Whisk again, combining the filtered juice, honey, glucose and sugar. Butter the ramekin moulds and cloth them with sugar. Pour the mixture and bake at 80 degrees for 25 minutes. Decorate with the candied oranges and sugar.
